Every since I stumbled upon this campfire recipe it’s been one of our favorites! I honestly didn’t expect it to be as good as it is. Inside that shell of foil, roasting over a fire, layers melt together into something more than just your average nacho dish. I tweaked the recipe just a bit and will share my notes below. I highly recommend giving this easy customizable one-dish meal (with easy clean up!) a try on your next camping trip.
Campfire Nachos
Ingredients:
Large deep foil pan (Tip: keep a couple of these in your camper because you never know when they’ll come in handy.)
Heavy duty aluminum foil
Canola oil spray (or oil of choice)
Bag of tortillas chips
Rotisserie chicken or browned ground beef
Packet of taco seasoning
2 cans of black beans (drained)
Diced tomatoes (canned or fresh)
Diced onion
Shredded cheese
2 cubed avocados
Instructions:
Tip: prep as much ahead of time as you can! So, at home, pull that rotisserie chicken into pieces and throw it into a storage bag that can fit easily into your camper fridge (or freezer, if doing this meal later in your trip) or cooler. Go ahead and dice that onion as well if you’d like.
Spray the foil pan so nothing sticks.
Layer the bottom with tortilla chips.
Layer with the meat and sprinkle some of the taco seasoning all over it.
Layer in any order, black beans, onions, tomatoes.
Spread a layer of shredded cheese.
Repeat all the layers one more time ending with a layer of cheese.
Top it with cubed avocado.
Spray a sheet of heavy duty foil with the non-stick spray and cover the top.
Use another large sheet of foil to add another layer on top of that wrapping around to secure it pretty well.
Place pan on top of grilling rack over the campfire. Don’t let the flames touch it, but should be pretty close.
About 15 mins in, carefully (with oven mitts) flip the pan over for about 10 more minutes.
Then check it to see if all the cheese is melted. Every fire is different so cook time will not always be the same. But that’s all part of the fun!
